SPRING RHUBARB GIN FIZZ
1 1/4 oz Gin
1/4 oz Sherry
1 oz Rhubarb Vanilla mixer
1/2 oz fresh squeezed lemon juice
1 egg white or egg white substitute
Combine all ingredients in a shaker and shake vigorously for 20 seconds to whip. Add ice to shaker and shake for another 20 seconds.
Pour 2-3 oz cold sparkling water into a rocks glass. Slowly pour mixture from shaker over sparkling water and garnish with a lemon.
Enjoy the fresh frothy deliciousness!
**if gin or sherry aren't your thing just add a little more mixer and sparkling water. It's just as great as a mocktail.
